What did the kid say when his mother poured oatmeal on him? “How can you be so gruel?”

I decided yesterday to whip up a batch of homemade Oatmeal cookies. I had never made them before, so I didn’t have a favorite recipe. I threw some ingredients together and ended up with delicious cookies. I don’t consume caffeine so instead of chocolate chips I used carob chips. Carob chips are similar to chocolate but are caffeine free and are made from a bean found native to the Mediterranean. They are also safe for dogs! More info here. You can find them in any bulk/health food store.

Approx. 12 cookies – 30 minutes

  • 2 cups large flake oats
  • 1 cup flour
  • 1 tsp baking powder
  • 1 tbsp brown sugar
  • 1 teaspoon flax seeds
  • 2 eggs
  • 1/2 cup softened margarine
  • 1 cup carob chips or chocolate chips

Preheat the oven to 350° F (175° C).

In a bowl mix together margarine, eggs and brown sugar. Combine flour, baking powder and flax seeds and add to mixture. Add oats then carob or chocolate chips. Spoon onto a greased baking sheet and bake for 10-20 mins or until golden brown and firm. Allow cookies to cool on baking sheet for a few minutes then transfer to a wire rack.

Serve when cool and enjoy!
